My name's Emma, and I started PlantPlate in 2013 with the help of my husband Scott, a web developer and fellow plantivore. I’m a certified Plant-Based Nutritionist who loves to cook, and I've followed a plant-based diet for over a decade. Having lived in various locations throughout the world - sometimes on a shoestring budget, and often with irregular and demanding work schedules - I’ve had to constantly adapt my diet in order to make it work. It’s taught me a lot, and it’s motivated me to show others just how accessible and enjoyable this way of eating can be.

The recipes featured on PlantPlate are based on minimally processed plant foods, including fruits, vegetables, whole grains and legumes. They're free from all animal products, processed oils and refined carbohydrates, and are made with simple and affordable ingredients. Crispy Crunchy Hash Browns

Ever get a craving for something crispy, crunchy, and satisfyingly savoury? We do. And that's when we make these hash browns! They tick all of the boxes above, without adding any unnecessary grease to your day.

Notes:

You really don't need oil to make delicious crunchy hash browns! This combination of shredded potatoes & spices crispens up beautifully in a hot oven, and you can enjoy them for breakfast, as a snack, or with a big side salad to make a complete meal.

We use paprika in this recipe, and you can use either regular or smoked for different flavour profiles. If you want to change things up a bit, try different herbs and spices, like chili powder, cumin & coriander seed, or thyme, basil & oregano.

In order to prevent sticking, spread your hash browns out evenly, and make sure they're thin. If the potato is too thick in the middle, the bottom will remain moist, which makes it very hard to remove from the baking paper. 

Ingredients:

  • 500g washed potatoes, grated / shredded
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. paprika
  • 1.5 tsp. corn or arrowroot starch
  • 1 tbsp. nutritional yeast (optional)
  • Pinch of salt (optional)
  • Black pepper, to taste

Instructions:

  1. Preheat the oven to 190°C / 375°F. Line a large baking tray with baking paper.
  2. Place shredded potatoes in a mixing bowl. Add all other ingredients, and mix well using a large spatula or your (clean) hands. 
  3. Place a very small handful of the potato mixture on the tray, and shape it into a thin round. Repeat this process with the remaining mixture. Make sure that your potato rounds are not thicker in the center, as this will prevent them from cooking evenly and will make them more likely to stick on the bottom.
  4. Bake the hash browns for 10-15 minutes until the top is brown and crispy. Remove from the oven, flip them over, then bake for a further 5-10 minutes. Check regularly to make sure they are not burning (if the outside is becoming too dark, reduce the oven temperature by 20°C / 40°F.)
  5. Remove from the oven and serve immediately with some Homemade Ketchup or Tomato and Red Pepper Chutney.
