My name's Emma, and I started PlantPlate in 2013 with the help of my husband Scott, a web developer and fellow plantivore. I’m a certified Plant-Based Nutritionist who loves to cook, and I've followed a plant-based diet for over a decade. Having lived in various locations throughout the world - sometimes on a shoestring budget, and often with irregular and demanding work schedules - I’ve had to constantly adapt my diet in order to make it work. It’s taught me a lot, and it’s motivated me to show others just how accessible and enjoyable this way of eating can be.

The recipes featured on PlantPlate are based on minimally processed plant foods, including fruits, vegetables, whole grains and legumes. They're free from all animal products, processed oils and refined carbohydrates, and are made with simple and affordable ingredients. Our articles are aimed at providing you with plant-based know-how when it comes to shopping, cooking, nutrition and day-to-day living. We have answers to common questions and share practical knowledge that we have acquired through experience. Finally, the resources section contains links to books, DVDs, and video presentations from some of the world's leading experts on plant-based nutrition. Vegg-Nog Smoothie

Forget the eggs and dairy this Christmas! Start your day out right with this healthy plant-based alternative. Sweetened with fruit and spiced with cinnamon and nutmeg, it's delightfully creamy and decadent, but won't weigh you down!

Drinking Eggnog is a tradition in many households around Christmas time, but unfortunately, most traditional Eggnogs are made with ingredients that are high in saturated fat and cholesterol, and often more alcohol than you may notice (until it's too late!) 

To keep it healthy this holiday season, we came up with a refreshing vegan version using almond milk, dates, bananas and oats- plus some spices and extracts to keep those traditional flavours alive.

We like to add a tablespoon of neutral-tasting nut butter such as almond or cashew (to make it nice and creamy!) but you can skip the nut butter if you want an even lower fat version.

Ingredients:

  • 1.5 cups almond milk
  • 1 ripe banana
  • 2 large fresh dates, pitted
  • 3 tbsp. rolled (old-fashioned) oats
  • 1 tbsp. cashew or almond butter (optional, for extra creaminess)
  • 1/2 tsp. grated nutmeg
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. alcohol-free rum extract
  • 1 cup ice cubes

Instructions:

Combine all ingredients in a high speed blender and blend until smooth. Pour into glasses and serve immediately, sprinkled with grated nutmeg.
