My name's Emma, and I started PlantPlate in 2013 with the help of my husband Scott, a web developer and fellow plantivore. I’m a certified Plant-Based Nutritionist who loves to cook, and I've followed a plant-based diet for over a decade. Having lived in various locations throughout the world - sometimes on a shoestring budget, and often with irregular and demanding work schedules - I’ve had to constantly adapt my diet in order to make it work. It’s taught me a lot, and it’s motivated me to show others just how accessible and enjoyable this way of eating can be.

The recipes featured on PlantPlate are based on minimally processed plant foods, including fruits, vegetables, whole grains and legumes. They're free from all animal products, processed oils and refined carbohydrates, and are made with simple and affordable ingredients. Our articles are aimed at providing you with plant-based know-how when it comes to shopping, cooking, nutrition and day-to-day living. We have answers to common questions and share practical knowledge that we have acquired through experience. Finally, the resources section contains links to books, DVDs, and video presentations from some of the world's leading experts on plant-based nutrition. 3 Ingredient Soft-Serve

The easiest, healthiest, creamiest plant-based ice cream we've ever made! All you need is 3 ingredients and a food processor.

Yield: Makes 4 Double Scoop Servings

Notes:

You'll want to use over-ripe bananas for this recipe. They should have brown spots, but not be black on the inside. Slice the bananas into 4 even-sized pieces, place them in an airtight container or zip-lock bag, and pop in the freezer. It's best to put them in there the day before so that they're well and truly frozen!

We've included 3 flavour variations below the main recipe: Chocolate, Cin-Almond and Strawberries and Cream. There are plenty more combinations you can try using a variety of frozen fruits, chopped nuts and flavour extracts. Experiment away!

For the Soy-Free Version: Use rice or almond milk in place of soy.

Ingredients:

  • 4 very ripe bananas, frozen solid (see note above)
  • 1/4 cup plant-based milk
  • 1 1/2 tsp alcohol-free vanilla extract

Instructions:

Place all ingredients in a food processor and blend until smooth. (You'll need to scrape down the sides every once in a while to make sure everything gets mixed properly.) 

Serve immediately in bowls with your favourite toppings. If there's extra ice cream left over, transfer to an airtight container and store it in the freezer.

 

Flavour Variations

 

Chocolate: Replace vanilla extract with 2 tablespoons of unsweetened cocoa powder. Prepare as above.

Cin-Almond: Use almond milk for the liquid. Add 2 teaspoons of ground cinnamon to the food processor with the other ingredients. Prepare as directed. Top each serving with 1 tablespoon of chopped toasted almonds.

Strawberries & Cream: Add 2/3 cup of chopped frozen strawberries and 1 tablespoon of cashew butter to the food processor with the other ingredients. Prepare as directed.
