My name's Emma, and I started PlantPlate in 2013 with the help of my husband Scott, a web developer and fellow plantivore. I’m a certified Plant-Based Nutritionist who loves to cook, and I've followed a plant-based diet for over a decade. Having lived in various locations throughout the world - sometimes on a shoestring budget, and often with irregular and demanding work schedules - I’ve had to constantly adapt my diet in order to make it work. It’s taught me a lot, and it’s motivated me to show others just how accessible and enjoyable this way of eating can be.

The recipes featured on PlantPlate are based on minimally processed plant foods, including fruits, vegetables, whole grains and legumes. They're free from all animal products, processed oils and refined carbohydrates, and are made with simple and affordable ingredients. Our articles are aimed at providing you with plant-based know-how when it comes to shopping, cooking, nutrition and day-to-day living. We have answers to common questions and share practical knowledge that we have acquired through experience. Finally, the resources section contains links to books, DVDs, and video presentations from some of the world's leading experts on plant-based nutrition. Roasty Toasty Taters

Say hello to the perfect roast potato! Crisp on the outside, soft and fluffy on the inside, you'll never believe these delicious taters were made without butter or oil.

Cook Time: 35 Minutes
Yield: Serves 4 as a side dish

Notes:

Potatoes are something we take very seriously here at PlantPlate. In fact, we've been known to make entire meals from this single ingredient! So when planning our festive meal this year, we knew it was time to perfect our oven-roasted potato recipe, and share it with you all.

The best thing about these is that the vegetable broth and nutritional yeast bake into a crisp, savoury crust, the way added oil or butter usually does. The herbs add a deliciousness and depth that remind us of a traditional roast dinner, but without all the traditional sodium and cholesterol that comes with it! 

Fresh is definitely best when it comes to the herbs- especially the rosemary- but you can substitute 2 teaspoons of dried thyme if fresh is not available.

Ingredients:

  • 1.5 kg (3 pounds) potatoes, washed
  • 1 tbsp. fresh thyme leaves
  • 1/2 cup low sodium veg broth
  • 5-6 sprigs fresh rosemary
  • 1.5 tbsp. nutritional yeast
  • Freshly ground black pepper, to taste

Instructions:

  1. Cut the potatoes into even, medium-sized chunks. Steam or boil for 10 minutes, drain well, and rinse with cold water. Leave them to sit in the colander for 10 minutes to cool slightly.
  2. Preheat oven to 220°C / 425°F. Line a large baking tray with baking paper. Transfer potatoes to a large mixing bowl, and add all remaining ingredients. Stir well to combine. Place potatoes on a baking sheet, skin side up, with a small gap between each one. Drizzle with any remaining liquid, and roast for 25-30 minutes until golden brown and crisp. Remove from the oven and serve immediately.
